Once again, I had to figure out what we were going to have for dinner. I scavenged our cabinets and freezers for anything I could cook with. I soon was at a loss. But I had a nice little nudge from the fridge when I had to move the full carton of eggs out of my way to see behind it and noticed the top of the carton was full of fresh eggs from our chickens this week. Inspired with the thought of something eggy, I put on my thinking cap. I opened the freezer to find, Steak-um meat due to be used up. So….. I popped the meat in the pan and cooked it up and scrambled the eggs and mixed them together. While that was going, I couldn’t, for the life of me, figure out what to make with this entree for veggies.
Then I remembered…..
I had placed a bundle of bananas in my freezer for just this type of occasion. Slice em up and pop them in the blender and work them into a “Raw Banana faux Ice Cream”. It wasn’t a vegatable, but it wasn’t bad for us either. The boys thought this treat with dinner was fabulous!!!
Now, I knew I was going to be having some heavy portions of salsa on my eggs, and at least one other child as well, so I don’t feel very guilty about not figuring out a veggie. I am actually pleased with myself. New diet and limited resources available. I have to say…I think I am doing pretty good for myself.
Well, S. has gone to Seattle for business and I am left to re-configure my habits and chores to accommodate for this change. Tonight, I make dinner. Not my usual task. I barely remember how. I thawed some pork chops with no ideas as to what I was going to create with them. In the last hour possible, I placed two and a half cups of water, 1 pkt of Onion soup mix and 1 and three quarters cup of rice and 4 pats of butter in a 9″x13″ baking dish. Then, I placed the four pork chops on top of it all. Placed it in the oven set at 400 degrees and winged it. About 45 minutes later that food was cooked to perfection and smelling delicious!! I love it when I slap something together and it actually works. I am not so good at following directions, but creating this is another thing entirely! LOL
Now to sit down and enjoy my creation.
This years Thanksgiving was a first. It was quiet and calm. No guests! As much as I love all the hussle and bustle of cooking for others and having a big ‘ole party, this year I needed to chill and not deal with the anxiety of it all. It was a pleasant change. We popped the bird in the oven around 9am and it was done earlier than expected, like by several hours. That was a nice surprise! We had been watching the NY Thanksgiving Parade all morning. We had all the fix’ins, of course! Cranberry sauce, actually two types. I like mine canned, S. likes his homemade with skins and all. Green Bean casserole, Mashed Tatters, fresh bread, stuffing, and black olives. hehehe We entered our meal reciting three things we were thankful for. We finished eating within a half an hour. DELICIOUS!!!! The bird came out perfectly!

After we cleaned up and digested our dinner. We fed all the barn animals and set up Movies. We watched Charlie Brown Thanksgiving, Charlie Brown Mayflower, and Charlie Brown Bon Voyage. I don’t know if anyone else remembers, but the television show “WKRP in Cinninati” had an episode the involved Turkeys. We watched that particular episode. We laughed are heads off!! While we watched the movies we broke out the dessert. I had cut down from making 5-7 pies to baking only TWO!!! One Pumpkin pie and the other Banana Cream Pie. I whipped up some thick whipped cream. Heated the Nut Roll we got from the Polaski deli/bakery this week. So FULL!!!!

The day kinda seemed forever long, but was really relaxing and enjoyable. After the wee one was fast asleep, we watched “Iron Chef America: Thanksgiving!”. What a great battle that was. Could you imagine making an entire Thanksgiving feast in an hour!! The birds still had feathers!!!! It was a great day overall!!
